Sourdough Coffee Cake

Now that it’s Cozy season , There’s nothing I love more then a weekend Afternoon or evening curled up by the Fireplace with a Warm drink and a Sweet Treat! This Coffee Cake is nicely balanced with sourdough Tang, Sweetness and Warming Cinnamon. This Recipe makes 2 8x8 Pans ( or 32 squares ), We usually can’t eat them all at once unless we have company, but it can easily be wrapped and stored in the freezer ready for Busy Weekends at the hockey rink or Last minute guests!

Start off with the “Cake”
Wet:
1 Cup of oil (or Melted Butter)
3 Eggs
1 Tbsp Vanilla
1/2 Cup Sourdough discard
1.5 Cups 2% milk


Stir Well and the Add;
1 Cup white sugar
1/2 Cup brown Sugar
1 Tsp Sea Salt
1 Tbsp baking Soda
3 Cups of Flour

Mix until combined and Preheat your oven to 350

In Another bowl:


Your Spiced Crumble:
3/4 cup melted butter
1 cups brown sugar
3 Tbsp Cinnamon
1 pinch of Nutmeg (or Pumpkin pie spice if you have it)
2 cups of flour
Stir until a Crumble Mixture Forms

Line your 2 8x8 pans with parchment and pour in roughly 1/4 of the mixture in each pan. Then Crumble 1/4 of the Spiced crumble onto the batter, then repeating this with the other 1/4 batter and 1/4 spiced mixture- To Create a cinnamon layer and pretty crumbly top. Bake in the Oven for 45 Minutes or until a toothpick comes out clean. You could Definity top this with a simple cream & icing sugar drizzle but we like it just how it is!
