Kamut Chicken Parmigiana

Don’t get me wrong I’m all about “Strong Girl Summer” Not really “Skinny Girl Summer” because lets face it i love food too much! However being healthy and strong i have been focusing on hitting my protein goals in the most delicious ways of course- I’ll never be caught eating boring diet food. I saw this a few times from other creators and wanted to put my spin on it with my Pasture ground chicken and the results we delicious! So Hearty and Filling I ate it Solo but you could totally have on a bed of spaghetti , Caesar salad or Mixed greens depending on your nutrition needs! Also this is a fair size but we love leftover’s , I love making a mess once and then eating for days- but feel free to half this for a smaller meal.

What you need:
2 pounds of ground Chicken
1/2 cup of freshly milled Kamut (Or any flour would work)
1 Egg
1 Tbsp Sea Salt/Herbamare
1 Tbsp Garlic
1 Tbsp Freshly cracked pepper


Plus Half a Jar of Marinara
2 cups Mozzarella
1/4 cup parmesan cheese

Preheat your oven to 425 on Roast setting (If you have this its kind of like a giant air fryer- if you dont bake is fine too!) Combine all your ingredients and spread onto a fair size piece of parchment paper. Spread mixture to 1/4 of an inch thick roughly in a rectangle shape. Then along the middle pour Sauce, Mozzarella Cheese and any other toppings you’d like inside. Then Fold your chicken mixture using the parchment to make a little “Panzerotti Shape” or like a Pizza pocket, Sprinkle generously with Parmesan and bake for 35-45 mins. The Top should be a deep golden brown and nice and Crispy. Enjoy!
