The Best Scones
Scones are a FAVOURITE around these parts and I love a recipe that is easily adaptable to whatever is in Season or that your Craving! Whether it’s Blueberries and Basil as Featured here or Sweet favorites like Milk Chocolate Chip or Butterscotch! The KEY to fluffy and Buttery Scones is to use a cheese grater to shred your butter- I mean who has a pastry cutter anymore! Grating your butter into your dry Ingredients allows those little bits of gold to be evenly distributed to create the perfect texture. Also letting them settle in your Fridge while your Oven preheats helps them keep their Shape. If i know I have a busy morning I will make these before bed and let Cool in the Fridge overnight to have a Mess Free Kitchen AND Delicious scones in the morning! Here’s the Recipe!
Dry Ingredients:
2 Cups Flour
1/2 Cup Sugar
1/2 tsp. Sea Salt
2.5 tsp. Baking powder
(Whisk to combine)
GRATE 1/2 cup Cold Butter (Gently stirring into your dry ingredients to avoid clumping)
Wet Ingredients:
(In Another Bowl)
1/2 cup Buttermilk
1 egg
1 tsp. Vanilla
1-Combine your Wet Ingredients to Dry until a Ratty dough comes together, then dump on your countertop and use your Hands to Shape into a Flattened Circle and add your Desired “Mix In”. Cut into 8 Wedges , Place Wedges on a parchment lined baking sheet, with your fingertips- dabble some buttermilk on top and sprinkle with sugar for Glossy Crunchy Tops.
2-Allow to firm up in your fridge for 20 Minutes or Overnight.
3-Preheat Oven to 400 then Bake for 18-22 Minutes- Juicy Fillings take more like 22-25 Minutes. *Watch for Nicely Dark Golden Edges *
*If you’re Able to make some Fresh Butter to top them with it elevates them to the High Heavens!
