Sourdough Focaccia Pizza!

Let’s face it it’s ONLY October and the mundane lunch rotation is already getting OLD! If your new to the sourdough game this one is tricky to pull off because you’ll need an Active Starter- but if your sourdough crazy like A lot of us are you should be ready to roll with this! The nice thing with this pizza dough is you make it the night before and it bulk ferments on your counter overnight while you sleep. In the morning it’s as simple as assembling and getting it in the oven with enough time to cool and pack into those lunch Pails!

Mix together:

1/2 cup active starter

1 3/4 cup water

Stir until bubbly milk texture is achieved.

Then add:

2 tsp sea salt

4 cups of flour

1 tbsp Olive oil

Mix until a shaggy dough is achieved then knead in your bowl 1-2 minutes, allow to rest 30 minutes, wetting hands and performing 1 set of stretch and folds, then drizzle with 1-2 tbsp olive oil , cover with a tea towel or cling wrap and leave on your countertop overnight.

Drizzle olive oil in your baking dish (roughly 9 by 13) , preheat the oven to 425. Plop your dough into the dish and dimple with your fingertips, top with sauce, cheese and anything else you like, (additional olive oil drizzle once complete) then bake at 425 for 25 mins.

Allow to cool on a wire rack and Enjoy!!
